    spooky cinnamon rolls

    Ingredients

    Dough:

    • 2½ cups all-purpose flour
    • ¼ cup sugar
    • 2¼ teaspoons instant yeast
    • ½ teaspoon salt
    • ½ cup whole milk
    • 3 tablespoons butter
    • 2 tablespoons vegetable oil
    • 1 teaspoon vanilla
    • 1 egg
    • ¼ cup water
    • 2 drops of purple gel food coloring

    Black Filling:

    • 1 stick softened butter
    • ½ cup granulated sugar
    • ½ cup brown sugar
    • 2 tbsp cinnamon
    • 2 tbsp black cocoa (you can find this in specialty stores or online)

    Cream Cheese Glaze:

    • 4 ounces cream cheese (room temperature)
    • 2 tablespoons butter (room temperature)
    • ¾ – 1 cup confectioner’s sugar

    Instructions

    Dough:

    1. Start by mixing your dry ingredients in a large bowl – that’s the flour, sugar, instant yeast, and salt.
    2. In a separate microwave-safe bowl, combine the milk, butter, and vegetable oil. Microwave until the mixture is warm but not boiling. Stir in the vanilla and purple gel food coloring.
    3. Slowly add the milk mixture to the dry ingredients and mix until a dough forms.
    4. Now, add the egg and water to the dough, and knead it until everything is well combined.
    5. Cover your dough and let it rest for about 10 minutes.

    Black Filling:

    1. While the dough is resting, combine the softened butter, granulated sugar, brown sugar, cinnamon, and black cocoa in a mixing bowl. Mix it until it’s a smooth, dark, and spooky paste.

    Back to the Dough:

    1. Roll out your dough into a large rectangle on a floured surface. You want it to be about ¼ inch thick.
    2. Spread your sinister black filling evenly over the dough, leaving a small border around the edges.
    3. Roll up the dough, starting from one long edge, into a spooky spiral.
    4. Slice the roll into even sections, about 1 to 1.5 inches wide. You should have about 12 spooky spirals.
    5. Place them on a greased or parchment paper-lined baking sheet, leaving a little space between each one. Cover them and let them rest for another 10-15 minutes.
    6. Preheat your oven to 350°F (180°C).
    7. Bake the cinnamon rolls in the preheated oven for 20-25 minutes, or until they’re golden brown and deliciously spooky.

    For the Cream Cheese Glaze:

    1. While the cinnamon rolls are baking, whip up the cream cheese glaze by mixing room temperature cream cheese, room temperature butter, and confectioner’s sugar in a bowl. Adjust the amount of sugar to your taste, depending on how sweet you like it.
    2. Once the cinnamon rolls are done baking, drizzle that cream cheese glaze all over them while they’re still warm, letting it ooze down the sides like ghostly apparitions.

And there you have it – your Spooky Cinnamon Rolls are ready to sink your teeth into! They’re soft, sweet, and a little bit eerie. Perfect for a Halloween morning or a ghoulish snack. Enjoy, and happy Halloween! 🎃👻

    Ingredients

    • 200g (1.5 cups) all-purpose flour
    • 100g (1 cup) cake flour
    • 50g (1/2 cup) powdered cacao
    • 3g (1 teaspoon) cornstarch
    • 2.5g (3/4 teaspoon) baking soda
    • 4g (1 teaspoon) baking powder
    • 2g (1/2 teaspoon) salt
    • 200g (1 cup) cold butter, cubed
    • 130g (3/4 cup) brown sugar
    • 70g (1/2 cup) white sugar
    • 2 eggs

    Instructions

    1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    2. In a medium-sized bowl, combine the all-purpose flour, cake flour, powdered cacao, cornstarch, baking soda, baking powder, and salt. Mix well and set this dry mixture aside.
    3. In a large mixing bowl, beat the cold, cubed butter with the brown and white sugars until the mixture is light and fluffy. This should take about 2-3 minutes.
    4. Add the eggs to the butter and sugar mixture one at a time, beating well after each addition.
    5. Gradually add the dry ingredient mixture to the wet ingredients. Mix until everything is well combined, and a dough forms. It will be quite thick and chocolatey.
    6. Once your cookie dough is ready, use a cookie scoop or your hands to form small, equally sized balls of dough. Place them on the prepared baking sheet, leaving enough space between each ball to allow for spreading.
    7. Now comes the fun part. To create the button eyes, use your thumb or the back of a spoon to make an indentation in the center of each dough ball. Press down gently, but not all the way through the cookie.
    8. Bake in the preheated oven for about 12-15 minutes or until the edges of the cookies turn golden brown. Keep a close eye on them to ensure they don’t overbake.
    9. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.
    10. To give your button eyes that classic look, you can use a tiny bit of white icing or melted white chocolate to add a small white dot in the center of each indentation. These are the “buttons” for Coraline’s eyes.
    11. Once the icing is set, your Coraline Button Eyes Cookies are ready to serve. These delightful, spooky treats will surely bring the eerie charm of the movie to your kitchen. Enjoy, and be careful not to get too mesmerized by their eyes! 👁🍪

  • Loaded Pork Taquitos, Mouthwateringly Simple

Pork Taquitos in a cast iron skillet cover in pico de gallo and sour cream

Now when I was learning to cook I was extremely anxious of cooking meat because I didn’t want to potentially poison anyone. These loaded pork taquitos though are ridiculously easy to make for a noobie chef. When I say these loaded pork taquitos are loaded they were quite literally getting out of hand, I had meats and cheese falling everywhere when I was eating (or maybe I’m just a mess in general). If I wasn’t so lazy I would be making these on the daily.
If you want other meats wrapped in a tortilla click here.

    Ingredients

    • 10 Ounces Ground Pork
    • 1 Yellow Onion
    • 2 tsp garlic powder
    • 1 tsp cumin
    • 1 tsp chili powder
    • Tex-Mex Paste
    • 6 Tortillas
    • ½ Cup Mexican Cheese Blend
    • 3 tbsp Sour Cream
    • 1 tsp Hot Sauce (or more I’m not your mom)
    • 4 tbsp guacamole
    • 1 Lime
    • 1 Tomato
    • 1 tbsp Olive Oil
    • Salt
    • Black Pepper

    Instructions

    1. If you think you can prep fast enough, put a rack to the middle, preheat you’re oven to 425 degrees, and put foil lightly oiled on a baking sheet (I put mine in a cast iron skillet). Otherwise, mince your onion until you have 1 tbsp then thinly slice the rest. Dice tomato and zest lime, cutting it into quarters after.
    2. Mix garlic powder, cumin and chili powder to make a spice blend.
    3. Over medium-high heat, heat a large drizzle of oil in a pan and cook sliced onions for 3 minutes. Next add ground pork, breaking into pieces and cooking for 4-6 minutes until meat is browned and onion softens. Mix in spice blend, Tex-Mex paste, ⅓ cup water and simmer until thickened for about 2-3 minutes.
    4. Coat tortillas evenly on both with 1 tbsp of olive oil. Fill tortillas with about ¼ cup of pork and 1 tbsp of cheese blend. Roll and tuck the tortillas tightly until shaped like a taquito and place seam down on the baking sheet.
    5. Put the taquitos in the oven to bake for 8-12 minutes until golden brown and crispy.
    6. In one bowl combine tomato, minced onions, half the lime zest and lime juice from half the lime and salt to taste. In another bowl combine guacamole, sour cream, the other half of the lime zest and lime juice then salt and pepper to taste.
    7. Top your taquitos with pico de gallo, guac mixture and hot sauce.

  • The Most Terrific Pastelon Dish For The Holidays

Hey y’all! Here we come with another hit for your holiday dishes. This dish right here, you have to make at least once because it is that delicious.

Pastelon is a traditional dish from the Caribbean. Depending on what part of the Caribbean you are from, the way pastelon is prepared varies. Some people use other types of meats and or veggies. Other mash the sweet plantains, while others simply slice them. This dish is mostly prepared during the holidays, Thanksgiving, Christmas, you name it. And in my culture pastelon is a dish that consists of sweet mashed plantains, ground beef seasoned to taste and cheese. It is easy and affordable to make and very filling, and on top of that it is also delicious. I know, hard to believe, right!? But I assure you, it’s definitely all that and a little more.

It’s a delicacy of flavor in each layer, similar to a lasagna (or casserole) but the pasta is replaced with sweet plantain. This dish is an all-time favorite of mine, every time I go to family gatherings and I see a pastelon at the table, my heart gets so warm and happy.

    Serving size: 6 large servings

    Ingredients:

    • Salted Butter
    • Flour
    • All-Purpose Flour
    • Baking Powder
    • Eggs
    • Sugar
    • Powdered Sugar
    • Vanilla Extract
    • Evaporated Milk
    • Milk
    • Condensed Milk
    • Cream Cheese

    To prepare the mold:

    • 1 tablespoon salted butter
    • 1 tablespoon flour

    Preparation:

With a silicon brush, bush butter and flour on a baking pan.

    Heat the oven to 350°F(175°C).

    To make the dough:

    • 3 eggs, medium with the yolks and whites separated
    • 1 cup sugar, [187 g] divided
    • 1⅓ cup all-purpose flour, [140 g]
    • 1 teaspoon baking powder
    • ¾ stick salted butter, [173 g] at room temperature
    • 1 teaspoon vanilla extract

    Preparation:

    • Using the wire whisk of the mixer, whisk the egg whites until stiff, start at low speed, then increase in a few seconds.
    • Add half the sugar and whisk until firm and glossy. Once this mix is ready, put it to the side until it’s ready to use.
    • Now, mix the flour and baking powder and sift. Put this mix also to the side until it’s ready to use.
    • Using the paddle attachment of the mixer, whisk the butter and yolks for 3 minutes on medium-high speed.
    • Add the rest of the sugar and whisk until light and fluffy and a very light yellow color (about 5 minutes).
    • Add the vanilla extract, then add the flour in three parts, mixing well before adding more flour. Once it is well mixed, it will have a very thick consistency, somewhere between cookie and cake dough. Don’t worry you’re doing so well!
    • Add ⅓ of the egg whites. With a spatula, fold the egg whites into the dough with a circular motion. Add the rest of the egg whites in two steps, always incorporating with an enveloping motion.

At this point, it will be a soft dough with a lot of air incorporated. Pour this mix into your baking pan and bake until a toothpick inserted in the center comes out clean and is golden brown on top (about 30 minutes).

Once it’s ready, cool to room temperature before removing from the mold. Cut the crust. Place on a rimmed plate that can hold the milk sauce.

    To the presentation

    • 1¼ cup evaporated milk, [296 ml]
    • ½ cup of milk, [237 ml]
    • ¾ cup condensed milk, [177 ml]
    • ¾ teaspoon vanilla extract
    • 1 cup whipping cream
    • ½ cup powdered sugar, 100 g]
    • 1 tablespoon cream cheese
    • Strawberries or cherries to decorate, optional

    Preparation:

    • Mix the evaporated, milk and condensed milk. Mix with vanilla extract.
    • Pour the milk mixture over the cake and let it soak. Bathe it regularly until it has absorbed half of the liquid (one or two hours), keeping it in the refrigerator the entire time.

You can make the topping while it cools.

If you are going to use meringue icing as a topping, use this recipe (with video).

However, if you are using whipped cream as a topping, chill the mixer bowl and wire whisk for at least half an hour beforehand (or 20 minutes in the freezer).

    • Beat the cream on medium-high speed until it begins to form peaks (about 3 minutes).
    • Add the powdered sugar and cream cheese and whisk until combined and formed firm peaks, but be careful not to overdo it, or the cream will turn into butter.

Once the icing is ready, it’s time to decorate the tres leches cake.

    • Spread the whipped cream over the cooled cake and decorate with strawberries or cherries.

Now you’re all done and ready to taste this amazing recipe. Don’t forget to keep refrigerated until ready to serve. It is best to consume it within 24 hours.
